A template records the actual room — every cabinet edge, every wall that is not quite square, every outlet and window that intrudes on the counter run — so the slab can be cut to fit that specific kitchen rather than a generic drawing of it. That is why templating has to wait until cabinets are installed and level; a template taken earlier just measures a plan, and plans and finished rooms rarely match exactly.
Seam placement is dictated by slab size and the layout of the run, not by preference, and there is no material that comes in one continuous piece long enough for every kitchen. A fabricator working honestly shows you where the seams will fall before anything is cut, along with where the sink or cooktop cutout will sit relative to the front edge and the cabinet below. Sink and cooktop selections need to be finalized before that cutout is cut — changing the model afterward can mean the cutout no longer fits.
