Most install-day delays trace back to something that was not settled before the fabricator showed up with the slab.
A countertop install is a short visit built on a long chain of earlier decisions. Most of what causes a delay on install day was actually decided — or left undecided — weeks earlier.
The template was taken against the cabinets as they were on templating day. If anything shifted, was adjusted, or was not actually fastened down since then, the countertop may no longer sit the way it was measured to. Confirm nothing has moved between templating and install.
The cutout is cut to the specific unit selected at templating. Swapping to a different sink or cooktop model afterward — even one that looks similar — can mean the cutout no longer matches, and that is not something fixed on install day.
An undermount sink hangs from the underside of the countertop rather than resting on the cabinet the way a drop-in does. The cabinet needs a substrate and bracing built for that load, and that has to be sorted before install, not discovered when the sink is set.
Supply lines, drain rough-in and any gas or electrical for a cooktop should be positioned to clear the new cutout locations. This is coordinated at templating, but it is worth confirming nothing changed on the plumbing or electrical side since then.
If an old countertop is coming out, confirm ahead of time whether that removal is part of the visit or needs to happen separately, and clear the counters and nearby floor space so the crew is not working around dishes and small appliances.
Expect some noise and dust from cutting on site for final fit adjustments, sink and faucet reconnection if that is part of the scope, and a final check of seams and edges before the crew leaves. Any gap or issue is far easier to address in that moment than after the kitchen is back in use.
